Appearance
White crystalline powder, odorless, with a slightly bitter taste and uniform particle size, no visible impurities. It has good fluidity in dry state, is not easy to agglomerate, and the color remains pure white under normal storage conditions without discoloration. It dissolves slowly in cold water and quickly in warm water, forming a colorless, transparent and clear solution without precipitation.
Physical Properties
Melting point: 295-300°C (lit.), decomposes while melting, and does not have a clear melting process; it is stable when stored below 250°C, without decomposition or volatilization. Boiling point: Predicted to be 223.8°C (760 mmHg), but it decomposes before reaching the boiling point under atmospheric pressure, so there is no actual boiling phenomenon.
Density: 1.103 g/cm3 (25°C, predicted), stable in solid state under normal temperature and pressure, and the density does not change significantly with environmental humidity. Solubility: Soluble in water, the solubility is 8.85 g/100 mL (20°C) and 11.7 g/100 mL (30°C); slightly soluble in ethanol (about 0.2 g/100 mL at 20°C); insoluble in ether, chloroform, benzene and other non-polar organic solvents. The solubility in water increases significantly with the increase of temperature.
Other properties: It is stable in dry air, not easy to absorb moisture or volatilize; it has no corrosiveness, and its aqueous solution is weakly acidic (pH≈5.5-6.5); it is optically inactive due to being a racemic mixture (DL-form).
Chemical Properties
1. Amphotericity: As an α-amino acid, it has both amino (-NH?) and carboxyl (-COOH) groups, showing amphoteric properties; it can form internal salts (zwitterions) in aqueous solution, and the isoelectric point (pI) is about 6.0.
2. Stability: Stable under normal temperature and dry conditions; stable to light and heat below 250°C; decomposes when heated above 295°C, producing ammonia and other small molecular compounds. It is stable in acidic and alkaline solutions within a certain range, and does not decompose easily.
3. Reactivity: It can undergo acylation, esterification, amidation and other reactions; it can form peptides with other amino acids under the action of catalysts; it does not react with common oxidants and reducing agents under normal conditions, and has good chemical stability.
4. Incompatibility: Incompatible with strong oxidizing agents and strong reducing agents; avoid mixed storage to prevent chemical reactions; it is stable when mixed with common food additives, pharmaceutical excipients and chemical reagents.
Usage
1. Food industry: Used as a food additive, mainly as a nutritional fortifier to supplement valine (one of the essential amino acids for humans and animals); added to beverages, dairy products, baked goods, health products and feed to improve nutritional value; also used as a flavoring agent to adjust the taste of food.
2. Pharmaceutical field: Used as a raw material for the synthesis of pharmaceutical compounds, such as amino acid injections, oral amino acid preparations, and antiviral drugs; used as an auxiliary reagent in biochemical experiments and pharmaceutical analysis, such as a reference substance for amino acid content detection.
3. Feed industry: Used as a feed additive, added to animal feed (such as poultry, livestock, aquatic feed) to supplement the essential amino acid valine, promote animal growth, improve feed conversion rate, and enhance animal immunity.

Storage
Store in a sealed container, keep away from light, heat and moisture; store in a cool, dry and well-ventilated warehouse, the recommended storage temperature is 15-25°C. It should be stored separately from oxidants, strong reducing agents and other incompatible substances, and should not be mixed for storage; avoid long-term exposure to air and moisture to prevent agglomeration. The storage period can reach 2-3 years under proper storage conditions.
