Physical & Chemical Properties
- Appearance: Clear colorless to light yellow or amber viscous liquid, with a sharp sour acetic and caramel-like odor, hygroscopic, no visible impurities; color may darken slightly on prolonged storage without affecting quality.
- Melting Point: 11–12℃ (52–54°F; 284–285 K); stable at low temperatures, solidifies into colorless crystals when cooled below 11℃, melts quickly at room temperature.
- Boiling Point: 165℃ (329°F; 438 K) (atmospheric pressure); decomposes at high temperature (above 170℃); boils at 62℃ under reduced pressure (1.6kPa) without decomposition, suitable for vacuum distillation purification.
- Solubility: Miscible with water, ethanol, ether, chloroform, methanol and acetone; soluble in most organic solvents such as benzene and toluene; slightly soluble in petroleum ether.
- Stability: Stable under normal storage conditions (2–8℃); combustible; incompatible with strong oxidants, strong bases and reducing agents; hygroscopic, easy to polymerize when exposed to high temperature or light; prone to decarboxylation to form acetaldehyde and carbon dioxide under alkaline conditions.
- Key Parameters: Density 1.267–1.27 g/cm3 (20℃); Refractive Index n20/D 1.428 (±0.002); Flash Point 82–83℃ (closed cup); pH 1.2 (90 g/L aqueous solution, 20℃); pKa 2.39 (25℃), strong acidic; Viscosity 1.2 mPa·s (20℃).
Uses
Pyruvic acid is a key intermediate in glucose metabolism (glycolysis pathway) and a hub for the transformation of carbohydrates, fats, and proteins in organisms, with wide applications in biochemistry, pharmaceuticals, food, and agriculture. In the pharmaceutical industry, it serves as an important intermediate for synthesizing amino acids (L-tryptophan, L-leucine, L-cysteine), vitamins (vitamin B6, vitamin B12), sedatives, antioxidants, antiviral drugs, antihypertensive drugs, and anti-tumor drugs; it also acts as a raw material for the synthesis of pyruvate salts (sodium pyruvate, potassium pyruvate) which are widely used in clinical nutrition and cell culture. In the food and fragrance industry, it is used as a food additive and flavoring agent, contributing a unique caramelic, acidic taste and aroma, and is widely applied in baked goods, beverages, condiments, and winemaking to enhance flavor and freshness. In agriculture, it is used to produce high-efficiency fungicides, herbicides, and plant growth regulators, which can promote crop growth and improve stress resistance. Additionally, it functions as a critical biochemical reagent for determining glutamic-pyruvic transaminase (GPT/ALT) and glutamic-oxaloacetic transaminase (GOT/AST) levels in blood, as well as a reagent for detecting primary/secondary alcohols and aliphatic amines in chemical analysis; it is also used in cosmetic formulations to promote skin metabolism and anti-aging.
Packaging & Storage
Packaging: Laboratory grade: 1kg/5kg corrosion-resistant plastic bottles (sealed with Teflon gaskets); Industrial grade: 25kg/200kg corrosion-resistant HDPE plastic drums or IBC containers, labeled with "corrosive", "hygroscopic" and GHS hazard information, and marked with product name, CAS number, purity, and storage conditions. Storage: Store in a cool, dry, well-ventilated warehouse at 2–8℃ (refrigerated storage); keep tightly sealed, protected from moisture, light and air; avoid contact with strong oxidants, strong bases and reducing agents; shelf life is 12 months under specified storage conditions. Keep away from fire and heat sources; avoid direct sunlight during storage and transportation. Wear chemical-resistant gloves, goggles and protective masks during operation; use in a fume hood to avoid inhalation of vapor or contact with skin and eyes; if it comes into contact with the skin, rinse immediately with plenty of water for at least 15 minutes; if accidentally ingested or splashed into eyes, seek medical attention immediately.
