Dimethyl malate is an important hydroxy ester compound, with broad application prospects in food, pharmaceutical, cosmetic and organic synthesis fields, mainly used as intermediate and research reagent:

Food Industry: Used as an acidulant, color retention agent, preservative and emulsifier stabilizer in food and beverage production. It is widely applied in cool drinks (such as lactic acid bacteria drinks, milk drinks, soda, cola), frozen foods (such as fruit syrup, ice cream), processed foods (such as fruit wine, mayonnaise) and candies, which can enhance the sour taste, mask the bad aftertaste, maintain the color of fruit drinks and extend the shelf life of products. It is recognized as a safe food additive, in line with relevant standards such as China GB 2760 and FDA GRAS.
Pharmaceutical & Cosmetic Industry: Used as a pharmaceutical intermediate for the synthesis of various drugs; in cosmetics, it can be used as a raw material for skin care products, with moisturizing and conditioning effects. Storage Method

Store in a cool, dry, well-ventilated warehouse at a temperature of 2-8°C (refrigerated storage recommended for food grade and pharmaceutical grade). Keep containers tightly sealed to prevent moisture absorption, caking and hydrolysis. Avoid contact with strong oxidants, strong acids and strong bases; keep away from fire, heat sources and direct sunlight. It has slight hygroscopicity, so strict moisture-proof measures must be taken.
