- Appearance: Colorless to pale yellow transparent flakes, granules or powder
- Odor: Odorless, faint characteristic animal protein smell
- Solubility: Swells and absorbs cold water, fully dissolves in hot water (40℃+); soluble in glycerol; insoluble in ethanol, acetone, ether and non-polar solvents
- Gel characteristic: Aqueous solution forms elastic thermoreversible gel when cooled below 25–30℃; gel melts again after heating
- Density (25℃): 1.30–1.40 g/cm3
- Bloom strength: Common range 100–300g, determines gel hardness

Chemical Properties
- Composition: Hydrolyzed collagen polypeptide, rich in glycine, proline, hydroxyproline amino acid residues
- Amphoteric protein characteristics: Contains amino and carboxyl groups, isoelectric point pH 4.7–5.3
- Hydrolysis reaction: Long-term heating in aqueous solution, strong acid/alkali will break peptide bonds, reduce gel strength and viscosity
- Crosslinking performance: Can crosslink with aldehydes, tannins, transglutaminase to improve water resistance and thermal stability
- Coagulation property: Precipitates when encountering high-concentration ethanol, ammonium sulfate and heavy metal ions
- Thermal stability: Stable below 60℃; long-term heating above 80℃ causes protein degradation, gel ability declines
- Photostability: Avoid long-term strong sunlight; UV irradiation accelerates protein oxidation and yellowing
- Compatibility: Compatible with sugar, starch, glycerin, most food additives; incompatible with heavy metal salts, strong oxidants, high-concentration organic solvents
