- Solubility: Insoluble in water; miscible with ether, chloroform, hexane, ethanol; slightly soluble in methanol

Chemical Properties
- Structure: Vegetable unsaturated triglyceride, rich in double bonds (linoleic acid, linolenic acid)
- Oxidation resistance: Unsaturated double bonds easy to auto-oxidize under light, high temperature, air, produce peroxide and rancid odor; need antioxidants (VE, TBHQ) for preservation
- Saponification reaction: Reacts with strong alkali to generate soap and glycerol
- Hydrogenation: Double bonds can be catalytically hydrogenated to produce hydrogenated soybean oil (hard fat)
- Transesterification: Reacts with short-chain alcohols to synthesize biodiesel fatty acid methyl ester
- Thermal stability: Stable below 180℃; long-time high temperature over 220℃ crack, polymerize, produce harmful polar substances
- Acid-base stability: Stable under neutral condition; strong acid/alkali catalyzes hydrolysis to free fatty acids and glycerol
