- Appearance: Dark red crystalline powder, no odor
- Solubility: Insoluble in water; soluble in chloroform, dichloromethane, hexane, vegetable oil; slightly soluble in ethanol, methanol
- Melting Point: 172–175 ℃ (decomposes while melting)
- UV-Vis characteristic: Characteristic absorption peaks at 444 nm, 470 nm, 502 nm
- Hygroscopy: Non-hygroscopic under normal humidity
- Crystal form: Flaky crystal after recrystallization from n-hexane

Chemical Properties
- Molecular structure: Acyclic carotenoid with 11 conjugated double bonds, no β-ionone ring, strong free radical scavenging capacity
- Oxidation susceptibility: Conjugated polyene chain easily oxidized by oxygen, heat and light; color fades from red to pale yellow after oxidation
- Photodegradation: Extremely sensitive to ultraviolet and strong light, must be stored fully light-proof
- Thermal stability: Stable below 100 ℃; long-time heating above 120 ℃ accelerates oxidative degradation
- Isomerization: Under high temperature or light, all-trans lycopene converts to cis-isomers with reduced activity
- Antioxidation: Scavenge singlet oxygen, peroxyl radicals, stronger antioxidant activity than β-carotene
- Compatibility: Compatible with plant oils, vitamin E (VE can stabilize lycopene); incompatible with strong oxidants, heavy metal ions
