Chemical Properties
- Molecular structure: Terpene alcohol with two carbon-carbon double bonds and one tertiary hydroxyl group
- Esterification reaction: Reacts with organic acids to generate linalyl acetate, linalyl propionate and other flavor esters
- Addition reaction: Double bonds undergo hydrogenation, halogenation, hydration addition reactions
- Isomerization: Under acid catalysis, rearranges to geraniol, nerolidol
- Oxidation: Exposed to air and light for long time, oxidized to aldehydes and peroxides, fragrance deteriorates
- Thermal stability: Stable under normal temperature; high temperature above 220℃ causes cracking and isomerization
- Compatibility: Compatible with most perfume raw materials, cosmetic oils; incompatible with strong mineral acid, strong oxidants
