Chemical Properties
- Molecular structure: Cyclic monoterpene secondary alcohol, single chiral configuration L-type, cooling effect far stronger than DL-menthol
- Esterification: Secondary hydroxyl reacts with organic acids to produce menthyl acetate, menthyl lactate and other cooling flavor esters
- Dehydration: Under acid catalysis dehydration generates menthene olefin
- Oxidation: Oxidized to menthone by weak oxidants
- Thermal stability: Stable below 180 ℃; high temperature above 230 ℃ cracking volatilization
- Photostability: Long-term strong light will slightly turn yellow
- Compatibility: Compatible with all perfume raw materials, cosmetic base oils; avoid mixing with strong oxidants
