- Appearance: White or off-white crystalline powder
- Odor: Odorless, astringent taste
- Solubility: Slightly soluble in cold water, freely soluble in hot water, ethanol, methanol, acetone and glycerol; insoluble in benzene, chloroform and petroleum ether
- Melting Point: 250 °C (decomposes)
- Hygroscopicity: Slightly hygroscopic under high humidity
- UV Characteristic: Strong ultraviolet absorption peak at 260 nm in ethanol solution

Chemical Properties
- Molecular structure: Aromatic phenolic acid with three adjacent hydroxyl groups on benzene ring and one terminal carboxyl group
- Antioxidant activity: Excellent free radical scavenger due to polyhydroxy structure, strong reducing property
- Color reaction: Turns dark blue-black when reacting with ferric ion, typical characteristic of tannin phenols
- Esterification: Carboxyl group undergoes esterification with alcohols to generate gallate derivatives (propyl gallate, methyl gallate)
- Photostability: Sensitive to ultraviolet light; long-term light exposure turns sample pale brown by oxidation
- Thermal stability: Stable below 200 °C; decarboxylation occurs above melting point to form pyrogallol
- Compatibility: Compatible with polar solvents and most cosmetic excipients; incompatible with heavy metal ions, strong oxidants and alkaline substances
