Chemical Properties
- Molecular structure: Cyclopentenone skeleton with methyl and cis-pentenyl side chain, contains conjugated carbonyl double bond, cis configuration determines characteristic jasmine aroma
- Conjugated carbonyl reactivity: Carbonyl can undergo aldol condensation, reduction, addition reaction for derivative synthesis of complex floral fragrances
- Double bond oxidation: Unsaturated side chain prone to oxidative deterioration under air, light and high temperature, darkens liquid and loses aroma
- Isomerization: Cis-jasmone will partially convert to trans-isomer under high temperature, aroma quality declines obviously
- Thermal stability: Stable below 120 ℃; prolonged heating above 180 ℃ causes polymerization and discoloration
- Photostability: Light-sensitive; UV irradiation accelerates oxidation, liquid turns deep brown
- Compatibility: Compatible with most perfume esters, alcohols, terpenoid raw materials; incompatible with strong oxidants, concentrated strong alkali
